Easter table must-have: Classic silverbeet and cheese pie.
Ingredients:
  • 1 onion, chopped
  • 18.40 gm oil
  • 1 bunch silverbeet, chopped
  • 12 filo sheets
  • 80.00 ml parmesan
  • 10 eggs
  • 126.25 gm thickened cream
  • 128.75 gm milk
Instructions:
  • Preheat the oven to 180°C. In a pan, sauté 1 chopped onion in 1 tablespoon of oil until soft. Add 1 bunch of chopped silverbeet and cook until wilted. Remove and squeeze out any excess liquid.
  • *Brush 8 sheets of filo pastry with oil and fold each in half. Line a greased flan pan, letting the edges overhang. Sprinkle 2 tablespoons of Parmesan cheese over the base. Fill with half of the spinach, then layer with 6 hard-boiled eggs, the remaining spinach, and top with another 2 tablespoons of Parmesan cheese.*
  • In a bowl, whisk together 4 eggs, 1/2 cup thickened cream, and 1/2 cup milk. Season to taste. Pour the mixture into a pastry shell. Brush 4 sheets of filo pastry with oil, fold in half, and place on top of the mixture. Fold in the edges and brush the top with oil. Bake for 40 minutes.
