Potato, beef and fetta tray bake recipe

Versatile tray bake with any mince available. Crowd-pleasing deliciousness.
Ingredients:
  • 4 Red Royale or white potatoes, finely chopped
  • 18.20 gm olive oil
  • 20.00 ml Moroccan seasoning
  • 1 red onion
  • 1 carrot, peeled, finely chopped
  • 500g No Added Hormones 4 Star Beef Mince
  • 400g can diced tomatoes
  • 100g fetta, crumbled
  • 250.00 ml coriander leaves
  • 140g yoghurt
  • 1/4 tsp Moroccan seasoning, extra
Instructions:
  • Preheat the oven to 220°C. Line a roasting pan with baking paper. In a large bowl, mix potatoes with half of the oil and half of the Moroccan seasoning. Spread the mixture evenly in the pan. Bake for 15 minutes until potatoes are just tender.
  • Thinly slice half of the onion and transfer to a small bowl, then finely chop the rest of the onion.
  • In a large frying pan over medium heat, warm the remaining oil. Add carrot and chopped onion, and cook for 3 minutes until the onion softens. Add the mince and cook for 5 minutes until the color changes, breaking up any lumps with a wooden spoon. Stir in the remaining Moroccan seasoning and tomato, then bring to a simmer for 2 minutes until heated through. Finally, add peas and stir to combine.
  • Spread the flavorful mince mixture over the potatoes in the pan, then generously sprinkle with tangy feta. Bake for 10 minutes, or until everything is heated through to perfection.
  • Add a finishing touch of fresh coriander, sliced onions, and tangy yogurt on top of the mince mixture. Sprinkle with more aromatic Moroccan seasoning and season to taste.
