Indulge in a creamy and cheesy potato, broccoli, and cheese soup, perfect for any meal.
Ingredients:
  • 1.5 pounds potatoes, peeled and diced
  • 1 large onion, chopped
  • 6 cups water, divided
  • 6 cups chopped broccoli
  • 1 (32 ounce) container chicken broth
  • 1 (1 pound) package processed cheese food (such as Velveeta®), cubed
Instructions:
  • In a large soup pot, combine potatoes and onion, covering them with 3 cups of water. Bring to a boil, then simmer on medium-low heat until tender for about 20 minutes. Transfer the mixture to a large mixing bowl and let it cool.
  • Simmer broccoli, chicken broth, and water in the pot until tender, approximately 15 minutes. Let cool once done.
  • Blend the potato mixture until it is smooth and creamy using a stick blender. Coarsely blend the broccoli mixture.
  • Combine the smooth potato mixture with the broccoli, processed cheese, and evaporated milk. Stir over medium-low heat until the cheese melts and the soup is hot, approximately 15 minutes. Avoid bringing the soup to a boil. Season with salt and pepper to taste.
