Potato, onion and mushroom cake

Savor our delicious Potato Mushroom Cake - a simple and satisfying dish!
Ingredients:
  • 18.20 gm olive oil
  • 1 small brown onion, halved, thinly sliced
  • 60g cup mushrooms, sliced
  • 2 garlic cloves, crushed
  • 1 tsp chopped fresh thyme leaves
  • 200g potato
  • 6 eggs, lightly beaten
  • 125.00 ml frozen peas
  • Salad leaves, to serve
Instructions:
  • In an 18cm (base) non-stick frying pan over medium-high heat, heat half of the oil. Add onion and mushroom, cook for 4 minutes until softened. Stir in garlic and thyme, cook for 1 minute until fragrant. Transfer the mixture to a bowl and wash and dry the pan.
  • Peel the potato into thin ribbons using a vegetable peeler. Heat the remaining oil in a pan over medium-high heat and arrange half of the potato in the pan.
  • Combine eggs and peas with the onion mixture, season with salt and pepper, then gently stir to mix. Pour the egg mixture into the pan, reduce heat to low, and top with the remaining potato, pressing it slightly into the eggs. Cook for 15 minutes, or until just set.
  • Place the cake on a plate, cover with a pan, flip the plate and pan over, and cook the underside of the cake for 15 minutes or until golden and potato is tender. Cut into wedges and serve with salad leaves.
