Elevate your holiday feast with a modern twist on classic roast potatoes.
Ingredients:
  • 2 onions, thinly sliced
  • 2kg potatoes, such as desiree or pontiac, peeled, thinly sliced (a mandoline is ideal)
  • 50g unsalted butter, melted, plus 20g extra to pan-fry
  • 200g mature cheddar cheese, grated
  • 62.50 ml chopped sage leaves, plus extra whole leaves to garnish
Instructions:
  • Preheat your oven to 180°C and prepare a 22cm springform pan by greasing and lining the base and sides.
  • In a pan over medium-low heat, sauté onions in oil with seasoning for 8-10 minutes, stirring occasionally, until softened without browning.
  • Layer the sides of the pan with overlapping potato slices. Add two layers of potato on the base, brushing the second layer with butter. Sprinkle one-third of the onion, cheese, and chopped sage on top. Season, repeat the layers twice, and end with a final layer of potato. Brush with butter and cover loosely with foil.
  • Transfer the galette to a baking tray and bake at 350°F for 45 minutes, or until tender when pierced with a skewer. Remove the foil and bake for an additional 45 minutes, or until golden brown. Let the galette rest in the pan on a wire rack for 10 minutes before serving.
  • Melt some extra butter in a pan over medium heat. Add sage leaves and fry until crisp, about 1-2 minutes. Drain on a paper towel.
  • Top the galette with the crispy sage leaves, then cut it into wedges and enjoy.
