Potato and asparagus salad

Ingredients:
  • 1kg chat potatoes, peeled, halved
  • 2 bunches asparagus, woody ends trimmed
  • 150g mayonnaise
  • 42.00 gm lemon juice
  • 2 green onions, finely chopped
  • salt and cracked black pepper
  • 82.50 ml roughly chopped flat-leaf parsley
Instructions:
  • Place the potatoes in a pot and submerge them in cold water. Boil over high heat for 15 minutes or until they are just tender. Allow them to cool slightly before using.
  • Blanch the asparagus spears in boiling water briefly, then transfer to a bowl of ice water to halt the cooking process. Drain and set aside.
  • In a small bowl, mix together mayonnaise, lemon juice, green onions, salt, and pepper to create the dressing.
  • Arrange the asparagus and potato beautifully on a platter, sprinkle with parsley, and accompany with the delicious mayonnaise dressing.
