Quick and flavorful vegetarian curry bursting with color and spice.
Ingredients:
  • 20.00 ml ghee
  • 1 brown onion, coarsely chopped
  • 20.00 ml finely grated ginger
  • 1 long green chilli, seeded, finely chopped
  • 1 tsp ground turmeric
  • 2 tsp fennel seeds
  • 4 desiree potatoes, cut into eighths
  • 200g cauliflower, cut into florets
  • 4 ripe tomatoes, coarsely chopped
  • 150g pea
  • 1 tsp garam masala
Instructions:
  • In a large saucepan over medium heat, heat ghee. Add onion, garlic, ginger, and chili. Stir and cook for 5 minutes until onion softens. Add turmeric and fennel seeds, stir for 1 minute until aromatic. Add potato, cauliflower, and tomato. Bring to a boil, then reduce heat to low. Cover and cook, stirring occasionally, for 20 minutes until potato is tender and sauce thickens.
  • Stir in peas and aromatic garam masala, cooking for 2-3 minutes until peas are tender. Season to taste.
