Delicious potato and cauliflower curry topped with yogurt, fresh coriander, served over rice.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 brown onion, finely sliced
  • 150g curry paste
  • 2 tomatoes, finely chopped
  • 500ml chicken stock
  • 500g cauliflower, trimmed, cut into florets
  • 500g baby potatoes, halved
  • 200g green beans, halved
  • Steamed basmati rice, to serve
  • Natural yoghurt, to serve
  • Coriander leaves, to serve
Instructions:
  • In a large heavy-based saucepan over medium heat, heat oil. Cook onion, stirring occasionally, for 5 minutes until light golden and caramelized. Stir in curry paste and tomato, cook for 2 minutes until fragrant. Add stock, 1 cup (250ml) water, cauliflower, and potato. Simmer over low heat for 40 minutes or until cauliflower and potato are tender.
  • Cook beans in the pan for an additional 5 minutes.
  • Garnish your flavorful curry with a scoop of natural yogurt, fresh coriander leaves, and serve alongside a bed of fluffy rice.
