Potato and cauliflower curry

Warm and flavorful cauliflower and potato curry, perfect for cozy winter dinners.
Ingredients:
  • 4 large desiree potatoes, cut into 2.5cm cubes
  • 36.40 gm olive oil
  • 1 brown onion, finely chopped
  • 231.00 gm Balti curry paste (tomato and coriander)
  • 500g cauliflower
  • 3 tomatoes, chopped
  • 63.75 gm vegetable liquid stock
  • 165.00 ml coriander leaves, chopped
Instructions:
  • Boil potatoes in salted water until just tender. Drain. In a large frying pan over medium heat, sauté onion and garlic until tender, about 2 to 3 minutes.
  • Stir in the aromatic curry paste and cook until fragrant. Introduce the potatoes and cauliflower, ensuring they are well coated in the flavorful curry paste.
  • Add tomatoes and stock to the pot, then cover. Cook for 8 to 10 minutes, stirring occasionally, until vegetables are tender. If they are still firm, add 2 to 3 tablespoons of water and continue cooking until tender. Season with salt and pepper, stir in coriander, and serve.
