Potato and Cauliflower Casserole

Savory potato and cauliflower casserole, perfect with pork.
Ingredients:
  • 2 large potatoes, peeled and chopped
  • 1 head cauliflower, cut into florets
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1 cup shredded Swiss cheese
  • salt and pepper to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a medium casserole dish.
  • Boil potatoes in generously salted water until just tender, about 10 minutes. Drain and set aside.
  • Place the cauliflower in a steamer basket over boiling water in a pot. Steam for 5 minutes until tender yet firm. Set aside.
  • In a saucepan over medium heat, melt the butter and whisk in flour. Slowly pour in heavy cream until the mixture thickens. Take off the heat and stir in 1/2 cup of Swiss cheese until it melts. Season with salt and pepper to taste.
  • Place the potatoes and cauliflower in the casserole dish, then drizzle the cream sauce on top and sprinkle with the rest of the Swiss cheese.
  • Bake in the preheated oven for 20 minutes, until golden brown and bubbly.
