Savor the perfect harmony of spicy chorizo and tender potatoes in this simple and flavorful dinner.
Ingredients:
  • 360g fresh baby potatoes, with butter & parsley, cut into 1cm pieces
  • 1 onion, chopped
  • 2 chorizo, thinly sliced crossways
  • 18.20 gm olive oil
  • 8 eggs, lightly beaten
  • Salt & freshly ground pepper
Instructions:
  • Transfer the parsley and potatoes from the container into a large bowl. Melt the butter portion from the potato packet in a 24cm non-stick frying pan over medium heat. Add the onion and cook until soft, about 4 minutes. Transfer everything to the bowl.
  • Turn up the heat to medium-high and add the chorizo. Sear on each side for 2 minutes until golden brown. Transfer the chorizo to a bowl.
  • Preheat a grill to medium. Clean the pan with a paper towel. Heat oil in the pan over medium-high heat. Combine eggs, salt, and pepper in a bowl. Pour into the pan and cook on medium-low heat for 10-12 minutes until almost set with a slightly runny top.
  • Transfer the frying pan under the grill for 5 minutes until it is golden and set. Gently invert onto a chopping board and let it sit for 5 minutes to cool slightly. Slice into wedges and serve.
