Transport your taste buds to Spain with a classic tortilla featuring only six ingredients.
Ingredients:
  • 36.40 gm olive oil
  • 1 small red onion, finely chopped
  • 125g chorizo
  • 500g desiree potatoes, peeled, cut into 1cm pieces
  • 100g cherry tomatoes, halved
  • 8 large eggs
  • 120g baby spinach and rocket salad
  • Tortilla, to serve
Instructions:
  • In a 23cm ovenproof non-stick frying pan, heat half the oil over medium heat. Add onion and chorizo. Cook for 3 minutes until onion softens. Add potato and cook for 12-15 minutes on medium-low heat until cooked through. Stir in tomato and remove from heat.
  • Ensure the eggs are well combined by whisking in a bowl. Pour the eggs over the potato mixture and gently stir to coat the base of the pan and vegetables evenly. Smooth the surface and reduce the heat to low. Cook for 12 to 15 minutes, shaking the pan occasionally, until the eggs are nearly set.
  • Preheat grill to medium heat. Grill tortilla for 2 to 3 minutes until golden and set on top. In a bowl, toss salad with remaining oil, salt, and pepper. Serve sliced tortilla warm or cold with the salad.
