Dad's Day Meaty Omelette: A hearty breakfast delight.
Ingredients:
  • 1 (about 150g) chorizo sausage, halved lengthways, sliced
  • 1 large red onion, cut into thin wedges
  • 18.20 gm olive oil
  • 1 medium (about 250g) desiree potato, peeled, cut into 1cm dice
  • 2 garlic cloves, finely chopped
  • 6 free-range eggs, lightly whisked
  • 82.50 ml chopped fresh continental parsley
  • Salt & ground black pepper, to taste
Instructions:
  • Sear the sausage in a 20cm omelette pan or non-stick frying pan over medium heat for 8-10 minutes, until golden brown and cooked through. Transfer to paper towels to drain.
  • Saute the onion in the pan until it is just soft, about 5 minutes. Remove from the pan and set aside. Heat half of the olive oil in the pan and cook the potato over medium heat, stirring occasionally, until tender and golden, around 12-15 minutes.
  • Cook the garlic for an additional 2 minutes, then transfer it from the pan to a medium bowl. Combine the garlic with the sausage, onion, eggs, parsley, salt, and pepper in the bowl.
  • Heat the remaining olive oil in the pan over medium-high heat until hot, then gently stir in the omelette mixture to evenly distribute the ingredients. Cook over medium-low heat for 8-10 minutes until the omelette is almost done.
  • While the grill is preheating on high, transfer the omelette from the stovetop to the grill. Cook for 2-3 minutes until golden and fully cooked.
  • Serve the warm or room temperature omelette by cutting it into wedges.
