Indulge in cheesy chorizo potato quesadillas for a flavorful Mexican meal using Betty Crocker® Potato Buds®.
Ingredients:
  • 1/2 lb fresh chorizo sausage, casing removed, chopped
  • 1 cup hot milk
  • 2/3 cup Betty Crocker™ mashed potatoes
  • 2 tablespoons finely chopped onion
  • 1 tablespoon butter or margarine, melted
  • 1 tablespoon finely chopped fresh parsley
  • 1 clove garlic, finely chopped
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil
  • 10 corn or flour tortillas (6 inch), warmed
  • 10 slices Asadero, Chihuahua, Oaxaca or mozzarella cheese
Instructions:
  • Brown the chorizo in a 10-inch skillet over medium-high heat for about 5 minutes, stirring frequently, then drain.
  • Combine hot milk, dry potatoes, onion, melted butter, parsley, garlic, and salt in a medium bowl until mixture resembles stiff mashed potatoes. Gently fold in the chorizo.
  • 1. Preheat oil on the griddle over medium-high heat. Spread 2 tablespoons of filling on one side of each tortilla and place a slice of cheese on top of the filling. Fold the tortillas over the filling. Cook on the griddle, flipping once, until the cheese is melted. Enjoy with salsa on the side, if preferred.
