Whip up a creative and speedy side dish using available ingredients.
Ingredients:
  • 750g can tiny taters potatoes, drained, diced
  • 3 gherkins, chopped
  • 2 green onions, thinly sliced
  • 20.00 ml capers, drained, chopped
  • 2 hard-boiled eggs, finely chopped
  • 310g can corn kernels, drained, rinsed
  • 40.00 ml chopped fresh flat-leaf parsley leaves
  • 65.63 gm caesar dressing
Instructions:
  • In a large bowl, combine potato, gherkin, onion, capers, egg, corn, and half of the parsley. Drizzle with dressing, season with salt and pepper, then gently toss to mix. Top with the remaining parsley before serving.
