Creamy béarnaise sauce on sweet corn and tender potato and onion salad.
Ingredients:
  • 1 package (20 ounces) refrigerated diced potatoes with onions
  • 2 ears corn, husks removed and ears cut in half
  • 1/4 cup butter or margarine, melted
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic pepper
  • 1/4 teaspoon dried tarragon leaves
  • 2 tablespoons chopped fresh chives
Instructions:
  • Prepare the grill for direct heat by heating up the coals or gas. Cut four 18x10-inch pieces of heavy-duty aluminum foil and spray them with cooking spray. Place potatoes and one piece of corn on each foil. In a small bowl, combine the remaining ingredients except chives, then drizzle the mixture over the potatoes and corn. Coat the corn by turning it and gently stir the potatoes. Sprinkle with chives before serving.
  • Wrap the foil tightly around the potatoes and corn, ensuring a 1/2-inch fold and leaving space for circulation and expansion.
  • Grill the packets over medium heat for 25 to 35 minutes until the potatoes and corn are tender. Serve the packets on plates, cut an X on the top of each one, and sprinkle with chives.
