Delicious homemade pizza topped with sweet caramelized onions - a fun way to sneak in some veggies for the kids!
Ingredients:
  • olive oil cooking spray
  • 2 Desiree potatoes, unpeeled, very thinly sliced
  • 75g chargrilled eggplant, sliced
  • 150g chargrilled capsicum, sliced
  • 187.50 ml low-fat feta cheese, crumbled
  • 2 red onions, thinly sliced
  • 1 tsp balsamic vinegar
  • 500.00 ml plain flour
  • 8g sachet dried yeast
  • 18.20 gm olive oil
  • 187.50 gm warm water
Instructions:
  • Create delicious caramelized onions by lightly oiling a pan over medium heat. Saute onions for 8-10 minutes until golden. Stir in vinegar and continue cooking for 2 more minutes until onions caramelize. Keep warm by covering the pan.
  • To make pizza dough, in a large bowl, mix flour, yeast, and 1 teaspoon of salt. Create a well in the center and pour in oil and water. Use a wooden spoon to combine into a soft dough. Transfer to a floured surface and knead for 5 minutes until elastic. Divide dough into 4 portions and roll each into a 15cm square. Arrange on two greased baking trays, cover with a tea towel, and let rise in a warm place for 20 minutes.
  • Preheat oven to 220°C. Arrange potatoes on a microwave-safe plate, drizzle with 1 tablespoon of water. Cover and microwave on HIGH for 3 to 4 minutes until just tender. Drain excess water.
  • Spread a delectable combination of potato, eggplant, capsicum, caramelised onions, and feta on top of the pizza bases. Bake in the oven for 15 to 20 minutes, switching trays halfway through, until the bases are golden and the potatoes are tender. Serve and enjoy your gourmet pizza creation.
