Cozy up with a creamy potato leek soup bursting with hearty chunks of potato and sliced leeks for a comforting winter meal.
Ingredients:
  • 1 cup butter
  • 2 leeks, sliced
  • salt and pepper to taste
  • 1 tablespoon cornstarch
  • 1 quart chicken broth
  • 4 cups Yukon Gold potatoes, peeled and diced
  • 2 cups heavy cream
Instructions:
  • In a large pot over medium heat, velvety butter melts to create a flavorful base. Next, introduce leeks and enhance with a sprinkle of salt and pepper. Stir and sauté until the leeks reach a delectable tender state, approximately 15 minutes.
  • Whisk cornstarch into broth until smooth, then pour the mixture into a large pot. Add potatoes and bring to a boil.
  • Add cream to the pot and lower the heat. Let it simmer gently until the potatoes are tender, approximately 30 minutes. Remember to taste and adjust seasoning before serving.
