Warm up in style with a cozy Potato and Leek Soup perfect for winter.
Ingredients:
  • 18.20 gm olive oil
  • 1 large leek, chopped
  • 2 garlic cloves, crushed
  • 500g sebago potatoes, peeled, chopped
  • 1 litre chicken style liquid stock
  • 77.55 gm sour cream
  • 40.00 ml finely chopped fresh chives
Instructions:
  • In a large saucepan over medium-high heat, sauté leek and garlic in oil until leek has softened, about 3 minutes. Stir in potato and continue cooking for an additional 5 minutes.
  • Pour in the flavorful stock, sprinkle with a bit of pepper, cover the pot, then bring it to a boil. Lower the heat to medium-low and let it simmer for 15 to 20 minutes until the potato is tender. Allow it to rest for 5 minutes before serving.
  • In a blender, puree ingredients in batches until creamy. Serve.
