Budget-friendly gnocchi with indulgent blue cheese sauce, ideal for a cozy winter gathering.
Ingredients:
  • Melted butter, to grease
  • 1 quantity potato gnocchi (see related recipe)
  • Mixed salad leaves, to serve
  • 80g butter
  • 50g (1/3 cup) plain flour
  • 500ml (2 cups) milk
  • 100g mild blue cheese, crumbled
  • 125g (1/2 cup) mascarpone
  • 40g (1/2 cup) finely grated parmesan
  • 125.00 ml loosely packed finely chopped fresh chives
  • Salt & freshly ground black pepper
Instructions:
  • Preheat the grill on high and brush 4 ovenproof dishes that hold 500ml (2 cups) each with melted butter to grease them lightly.
  • In a saucepan over medium heat, melt the butter until it foams. Stir in the flour and cook for 1 minute, continuously stirring until the mixture bubbles and pulls away from the pan's sides. Remove from heat.
  • Begin by slowly pouring in half of the milk, all the while whisking diligently with a balloon whisk until the mixture is silky smooth. Then, gradually incorporate the rest of the milk, continuing to whisk until the mixture is smooth and fully combined.
  • In a saucepan over medium heat, stir constantly and bring to a boil for 2 minutes until the sauce thickens and coats the back of a spoon. Remove from heat and add blue cheese, mascarpone, half the parmesan, and chives. Stir until the cheese melts and the sauce becomes smooth. Season with salt and pepper to taste, then cover the surface directly with non-stick baking paper.
  • 1. Place gnocchi in boiling salted water until they float to the surface, about 3 minutes. Drain and keep warm in a covered bowl. Repeat process with remaining gnocchi in 3 more batches.
  • Drizzle gnocchi with creamy blue cheese sauce and gently mix. Transfer gnocchi to individual dishes and top with the rest of the parmesan.
  • Place under the preheated grill, 6cm from the heat source, until golden brown, about 5 minutes. Remove from the grill and serve with a side of salad, if preferred.
