Gluten-free potato and leek latkes with golden Parmesan crust use flaxseed meal as the binder for a delicious twist.
Ingredients:
  • 2 russet potatoes, cut into small pieces
  • 1 leek, cut into small pieces
  • 3 eggs
  • 0.25 cup flaxseed meal
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to a cozy 350°F (175°C) and prepare a baking sheet with parchment paper.
  • In a food processor, blend together potatoes and leek until mashed. Incorporate eggs, flaxseed meal, and salt by pulsing until combined.
  • Place dollops of the potato mixture onto the prepared baking sheet and shape them into 3-inch circles. Sprinkle with Parmesan cheese.
  • Bake in the preheated oven for about 20 minutes until the Parmesan cheese is melted and golden brown.
