Try this 50-minute French-inspired potato and leek gratin for a satisfying meatless dinner.
Ingredients:
  • 2 1/2 cups milk
  • 2 cloves garlic, finely chopped
  • 1 teaspoon salt
  • 2 pounds potatoes, cut into 1/4-inch slices
  • 3 medium leeks, sliced (2 cups)
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 cup shredded Swiss cheese (4 ounces)
Instructions:
  • Preheat the oven to 425° and generously grease a 2-quart gratin dish or shallow baking dish.
  • In a 12-inch skillet over medium-low heat, bring milk, garlic, salt, and pepper to a gentle simmer. Add potatoes and leeks, and cook uncovered, stirring often, for about 15 minutes until tender.
  • Spread the potato mixture into a gratin dish. Combine sour cream and mustard, then spread over the potato mixture. Top with cheese. Bake without covering for 20 to 25 minutes until bubbly on the sides and golden brown on top.
