Potato rosti with smoked salmon

Elegant party rostis topped with creamy sour cream and smoked salmon are the ultimate canapés for any occasion.
Ingredients:
  • 3 medium peeled red Delight potatoes, coarsely grated
  • 1 lightly whisked egg
  • 40.00 ml plain flour
  • 20g melted butter
  • Salt and pepper
  • Sour cream, to serve
  • Smoked salmon, sliced, to serve
  • Fresh dill, chopped, to serve
Instructions:
  • Drain grated potato well in a colander. Combine in a bowl with egg, flour, butter, salt, and pepper. Heat oil in a pan. Spoon potato mixture, flatten, and fry until crispy and golden. Drain on paper towels. Top with sour cream, smoked salmon, dill, and cracked pepper.
