Radish, olives, and bacon elevate this potato salad with a zesty crunch.
Ingredients:
  • 5 potatoes
  • 1 pound bacon
  • 2 stalks celery
  • 4 small green onions
  • 12 stuffed green olives
  • 5 radishes
  • 0.25 cup mayonnaise
  • 1 tablespoon lemon juice
Instructions:
  • Prepare the potatoes by washing, peeling, and cutting them into 1/2 to 3/4 inch pieces. Boil a large pot of salted water and cook the potatoes until tender yet firm, approximately 10 minutes.
  • Cut the bacon into small pieces and cook in a big, deep pan over medium-high heat until perfectly browned. Be sure not to overcook it.
  • Dice the celery, green onions, stuffed olives, and radishes finely and combine them in a large bowl with the potatoes and bacon. Mix well. Add mayonnaise and lemon juice to your liking, stir, then chill in the refrigerator for a couple of hours before serving. Optionally, top with sliced hard-boiled eggs. Enjoy your meal!
