Delight with a savory chicken and potato salad for a tasty lunch or a refreshing dinner.
Ingredients:
  • Olive oil, for brushing chargrill
  • 3 single chicken breast fillets
  • 1.5kg small Desiree potatoes, halved
  • 120g thin prosciutto slices, cut into thin strips
  • Chopped fresh chives, to garnish
  • 250mls (1 cup) sour lite cream
  • 23.40 gm wholegrain mustard
  • 21.00 gm fresh lemon juice
  • 2 tsp white wine vinegar
  • 9.00 gm sugar
  • 60mls (1/4 cup) light olive oil
  • 82.50 ml finely chopped fresh chives
  • Salt & ground black pepper, to taste
Instructions:
  • Prepare the chargrill by coating it with aromatic olive oil and preheating it over a gentle medium flame. Grill the trimmed chicken fillets for just 4 minutes on each side until they are perfectly cooked. Allow them to cool before carefully slicing them into thin pieces.
  • In a large saucepan, submerge the potatoes with cold water and bring to a boil. Cover and let them simmer for 12-15 minutes until they are tender. (Refer to microwave tip.) Cut the cooked potatoes into medium wedges.
  • Crisp up prosciutto in a non-stick pan for about 3 minutes. Drain on a paper towel.
  • For dressing, combine sour cream, mustard, lemon juice, vinegar, and sugar in a food processor. Blend until mixed. While blending, slowly drizzle in oil until thickened. Mix in chives and season with salt and pepper.
  • Assemble a delicious bowl by layering potatoes, chicken slices, and dressing. Finish with a flavorful touch of prosciutto and a sprinkle of chopped chives right before serving.
