Popular in Scotland, Ireland, and Wales, potato scones are versatile - perfect for breakfast with bacon and eggs, afternoon tea with butter and jam, or supper with smoked salmon.
Ingredients:
  • 250 g floury potatoes
  • 25 g unsalted butter plus extra for greasing
  • 50 g plain flour
  • ¼ teaspoon baking powder
Instructions:
  • Peel and roughly chop potatoes, then boil in salted water until tender. Drain, mash with butter. In a bowl, combine flour, baking powder, and salt. Mix in warm mash, gently forming dough. Shape into 2 balls on floured surface. Roll each into 5mm thick circle, prick with fork, then cut into quarters. Heat griddle and coat with butter. Cook potato scones on each side for 3 to 4 minutes until golden brown. Serve with bacon and fried eggs or scrambled eggs and smoked salmon.
