Crispy Scottish potato scones - a delicious use for leftover mash, sizzled to perfection on a griddle.
Ingredients:
  • 1 pound cooked potatoes
  • 4 ounces self-rising flour
  • 2 ounces butter
  • 0.5 pinch salt
Instructions:
  • Prepare all ingredients. Heat a lightly greased griddle or cast iron skillet over medium-high heat.
  • Combine flour, butter, and salt with the mashed potatoes until a firm dough is achieved in a large bowl.
  • Transfer dough to a lightly floured surface. Gently knead and roll into a 1/2-inch-thick circle. Divide into 6 equal wedges.
  • Cook the scones on the hot griddle in batches until they are golden brown, about 4 to 5 minutes on each side.
