Versatile base soup customizable with bacon, celery, onions, and carrots. Use nondairy creamer or light cream for a rich finish, avoid red potatoes.
Ingredients:
  • 10 pounds peeled and cubed potatoes
  • 4 cups non-dairy creamer
  • salt and pepper to taste
Instructions:
  • In a large pot, submerge the potatoes in water ensuring they are covered by about 2 inches. Boil the potatoes until very tender; then reduce heat and simmer.
  • Gradually mix nondairy creamer into the soup off the heat. Keep stirring until the soup reaches a creamy consistency.
  • Gently crush with a potato masher, then season with salt and pepper. Enjoy hot or cold.
