Wholesome low-fat soup disguised with savory ham or bacon.
Ingredients:
  • 3 potatoes, peeled and cubed
  • 1 cup chopped onion
  • 0.5 cup chopped celery
  • 0.5 cup chopped carrots
  • 0.25 cup nonfat dry milk powder
  • 2 tablespoons all-purpose flour
  • 2 cups skim milk
Instructions:
  • In a large saucepan over high heat, combine potatoes, water, onions, celery, carrots, and bouillon. Bring to a boil, then simmer covered on low for 20 minutes until potatoes are tender. Lightly mash before serving.
  • Combine milk powder and flour in a small bowl. Gradually pour in milk, stirring until smooth. Incorporate this mixture into the potatoes, stirring constantly. Cook and stir until the soup is thick and bubbly.
