Indulge in creamy red potatoes and sweet peas slow-cooked in Alfredo sauce with green onions and garlic.
Ingredients:
  • 2 lb. small (2 to 3-inch) red potatoes, cut into 1/4-inch-thick slices (8 cups)
  • 1/4 cup sliced green onions
  • 2 garlic cloves, minced
  • 1 (10-oz.) container refrigerated Alfredo sauce
  • 1/2 cup half-and-half or milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 cups frozen sweet peas
Instructions:
  • Generously coat a 3 1/2 to 4-quart slow cooker with nonstick cooking spray. Begin by arranging a layer of half of the potatoes, onions, and garlic in the slow cooker. In a medium bowl, thoroughly mix Alfredo sauce, half-and-half, salt, and pepper. Spoon half of the mixture over the first layer. Continue by layering the remaining potatoes, onions, garlic, and sauce mixture on top. Resist the temptation to mix and let it cook as is.
  • Cover and simmer on high for 3 to 4 hours.
  • 30 minutes before serving, generously sprinkle peas over the potato mixture. Cover and cook on high for an extra 20 to 30 minutes. Gently stir to combine peas with potatoes just before serving.
