Whip up a simple and satisfying corn and potato soup with pantry staples. Perfect for a busy day - let it simmer while you attend to other tasks.
Ingredients:
  • 6 medium potatoes, peeled and cubed
  • 6 stalks celery, chopped, leaves reserved
  • 1 medium onion, chopped
  • 2 cubes chicken bouillon
  • 2 (15.25 ounce) cans whole kernel corn, drained
  • 0.25 cup chopped fresh chives
Instructions:
  • In a large pot, add potatoes, celery with leaves, and onion. Cover with water and bring to a boil.
  • Discard celery leaves and dissolve bouillon cubes in the pot. Add corn and simmer on medium-low heat until potatoes are tender, around 20 minutes.
  • Stir in chives and simmer for an extra 5 minutes. Serve the soup hot.
