Classic potted meat made with minced beef and butter, perfect on warm bread or toast.
Ingredients:
  • 1 pound beef stew meat, cut into 1/2 inch pieces
  • 0.25 pound butter
  • salt to taste
  • ground black pepper to taste
  • paprika to taste
  • ground nutmeg to taste
Instructions:
  • In a heavy medium saucepan, gently cook beef in a flavorful bath of water until exquisitely tender, adding more liquid as needed, approximately 2 to 3 hours. Once done, drain the beef, saving the precious cooking liquid for later use.
  • Grind cooked stew meat twice in a meat grinder until it becomes a thick, stringy paste.
  • Melt butter in a small saucepan, then strain through cheesecloth to clarify.
  • In a medium bowl, combine the cooked meat with 3/4 of the strained, melted butter. Season the mixture to taste with salt, pepper, paprika, and nutmeg. Add reserved cooking liquid to your preferred level of moisture.
  • Pour the mixture into clean containers and generously top with the remaining butter. Cover tightly and let it chill in the refrigerator until ready to serve.
