Potted goat's cheese & pesto dip

Ingredients:
  • 200g soft goat's cheese
  • 125ml milk
  • 75.00 gm (3 tbsp) basil or rocket pesto
  • 44.00 gm sweet chilli sauce
  • 6 red radishes, halved
  • 1 small fennel bulb, sliced lengthways
  • 1 bunch baby (Dutch) carrots, peeled
  • 1 punnet cherry tomatoes, halved
  • 12 thin grissini (bread sticks)
Instructions:
  • In a food processor, combine goat's cheese and milk. Season with salt and pepper, then blend until smooth. Spread 1 teaspoon of pesto in the bottom of 6 x 1/2 cup (125ml) glasses. Layer cheese mixture on top. Finish with a dollop of chilli sauce and remaining pesto. Serve garnished with carrot fronds, alongside vegetables and grissini for dipping.
