Elevate your muffin game with these irresistible fruit and nut delights.
Ingredients:
  • 1/4 cup chopped pecans
  • 1 tablespoon firm butter or margarine
  • 1/2 cup packed brown sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 egg
  • 1 2/3 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped fresh peach
  • 1/2 cup coarsely chopped pecans
Instructions:
  • Preheat the oven to 400°F. Grease the bottoms of 12 regular-size muffin cups or line them with paper baking cups. In a small bowl, combine 1/4 cup brown sugar and 1/4 cup pecans. Incorporate butter using a pastry blender or 2 table knives until the mixture is crumbly. Set aside.
  • In a large bowl, whip up a delightful mixture of 1/2 cup of brown sugar, milk, oil, vanilla, and egg until perfectly combined. Gently fold in flour, baking powder, and salt until just moistened. Then add in peaches and 1/2 cup of pecans. Divide the batter evenly among muffin cups - they should be almost full. Finally, top them off with a sprinkle of the topping.
  • Bake until golden brown, then transfer to a cooling rack right away.
