Savor the flavors of summer with prawns, fresh figs, and zesty lime aioli.
Ingredients:
  • 12 fresh figs, halved
  • 36 cooked king prawns, peeled (tails left intact), deveined
  • 30 slices prosciutto, halved lengthways
  • 3 garlic cloves, finely chopped
  • 3 egg yolks
  • 1 lime, juiced
  • pinch of sea salt
  • 227.50 gm olive oil
Instructions:
  • Prepare a zesty lime aioli by blending garlic, egg yolks, 2 tablespoons lime juice, and sea salt in a food processor until smooth. Gradually stream in oil while the processor is on. Season with salt and pepper, then transfer the aioli to a bowl, cover with plastic wrap right on the surface, and chill.
  • Take each fig half and prawn, wrap them in a strip of prosciutto, and secure with toothpicks. Place them on a plate and serve with lime aioli.
