Try this: Weeknight favorite - Easy prawn tacos.
Ingredients:
  • 12 medium green prawns, peeled, deveined
  • Salt & freshly ground black pepper
  • 4 flour tortillas
  • 1 mignonette lettuce, leaves separated, washed, dried, shredded
  • 2 ripe avocados, halved, stones removed, peeled, thickly sliced
  • 105g (1 3/4 cups) finely gratedvintage cheddar
  • 1 bunch coriander, leaves picked
  • 40.00 ml drained sliced jalapeno chillies (omit if cooking for kids)
  • 42.00 gm fresh lime juice
  • Lime wedges, to serve
Instructions:
  • In a glass bowl, mix together prawns, oil, and garlic, then season with salt and pepper to taste.
  • 1. Preheat a non-stick frying pan over medium heat. Cook prawns for 3 minutes per side until they curl and change color. Place on a plate and cover with foil to keep warm.
  • After wiping the pan with a paper towel, heat it over medium-high heat. Cook each tortilla for 30 seconds on each side or until golden. Transfer to a plate and cover with foil. Repeat the process with the rest of the tortillas.
  • Arrange lettuce, avocado, onion, prawns, cheese, coriander, and chillies on tortillas. Squeeze lime juice on top, roll tightly, leaving one end open. Serve with lime wedges.
