Prawn, ruby grapefruit and macadamia salad

Sensational summery prawn salad - perfect starter!
Ingredients:
  • 2 baby cos lettuce hearts, leaves separated
  • 1 bunch radishes, trimmed, very thinly sliced
  • 1 small zucchini, cut into thin ribbons
  • 750g prawn
  • 125.00 ml macadamia nuts, toasted, finely chopped
  • 2 ruby red grapefruit
  • 57.50 gm avocado oil (see notes)
  • 82.50 ml small fresh coriander sprigs
  • Toasted crusty herb bread, to serve
Instructions:
  • Layer crisp lettuce leaves elegantly on a spacious serving platter. Add a vibrant assortment of radish, zucchini, succulent prawns, and crunchy macadamias on top.
  • Peel and separate grapefruit, saving juice (you'll need 1/4 cup). Squeeze membrane over bowl to extract juice, then discard membrane. Mix grapefruit segments into salad.
  • In a bowl, combine grapefruit juice and oil, then season with salt and pepper. Drizzle the dressing over the salad, sprinkle with coriander, and serve with bread.
