Prawn and black bean quesadillas

Enjoy delicious prawn and bean quesadillas for your perfect Mexican night!
Ingredients:
  • 1 small red onion, finely chopped
  • 1kg raw banana prawns, peeled, deveined, halved lengthways
  • 400g can black beans, rinsed, drained
  • 35g pkt Chipotle Seasoning
  • 12 Original Tortillas
  • 180g tasty cheese
  • 2 tomatoes, finely chopped
  • 3 spring onions, thinly sliced
  • Mission Chunky Mild Salsa, to serve
  • Sour cream, to serve
  • Coriander leaves, to serve
  • Lime wedges, to serve
Instructions:
  • Heat oil in a large frying pan over medium-high heat. Sauté onion for 3 mins until softened. Add prawn, beans, chipotle seasoning, and 1/2 cup (125ml) water. Bring to a boil, then simmer on low for 3 mins until thickened and prawn is cooked. Transfer to a bowl.
  • Prepare your sandwich press or large frying pan until hot. Arrange 6 tortillas on a clean work surface. Layer with cheddar cheese, tomatoes, prawn mixture, spring onions, and top with the remaining tortillas.
  • Cook each quesadilla individually in a sandwich press for 3 minutes or in a frying pan for 1-2 minutes on each side until the cheddar cheese is melted. Cut them into wedges and serve with salsa, sour cream, fresh coriander, and lime wedges. Enjoy!
