Quick and delicious one-pot Greek meal ready in minutes.
Ingredients:
  • 36.40 gm olive oil
  • 250g Rice & Chia Steamed Rice
  • 250g cherry tomatoes
  • 400g peeled green prawns, tails intact
  • 80g feta
  • 2 lemons, cut into wedges
  • Fresh oregano sprigs, to serve
Instructions:
  • 1. Preheat the grill on high. 2. Heat oil in a large frying pan over medium heat, then add rice and tomatoes. 3. Cook and stir for 1-2 minutes until warmed through.
  • Top the dish with succulent prawns and sprinkle over crumbled feta. Drizzle lightly with olive oil before broiling for 4 minutes, or until the prawns are cooked through and the tomatoes have burst.
  • Squeeze the juice of 1 lemon over the dish, season, sprinkle with oregano, and serve with the extra lemon wedges on the side.
