Luscious prawn and feta pasta with zesty lemon.
Ingredients:
  • 80ml olive oil
  • 4 cloves garlic, thinly sliced
  • 500g vine ripened tomatoes, roughly chopped
  • 1.25 gm smoked paprika
  • 2.25 gm sugar
  • 20.00 ml fresh thyme leaves
  • 20.00 ml fresh oregano leaves
  • Sea salt and freshly ground black pepper to season
  • 500g cooked cocktail prawns
  • 375g thin spaghetti
  • 100g Tasmanian feta, crumbled
  • Finely grated zest of 1 lemon
Instructions:
  • In a large frying pan over low heat, gently cook half of the oil with the garlic until softened. Stir in tomatoes, paprika, sugar, half of the thyme, oregano, salt, and pepper. Cook over medium heat for 5 minutes until tomatoes slightly soften. Add prawns and cook until heated through.
  • Cook pasta in a large pot of salted, boiling water until al dente. Drain pasta and mix it into the sauce until fully coated.
  • Portion the pasta into four serving bowls. Garnish each bowl with feta cheese, lemon zest, and the rest of the thyme leaves. Finish by drizzling the remaining olive oil over each bowl. Enjoy right away.
