Prawns and oranges create a uniquely delicious pasta dish.
Ingredients:
  • Zest and juice of 1 orange
  • 1 large pinch saffron threads
  • 300g spaghetti
  • 2 (about 200g) zucchini, thinly sliced
  • 500g green prawns, peeled, deveined, tails intact
  • 40.00 ml chopped flat-leaf parsley
Instructions:
  • Combine the orange zest, juice, and saffron in a small bowl and let it infuse for 10 minutes. Cook the pasta in a pot of boiling salted water until al dente.
  • In a hot frypan, sizzle zucchini in oil until golden, then add prawns and cook until done. Stir in zest, juice, saffron, and let simmer briefly. Sprinkle with parsley, season, and toss with cooked pasta.
