Spaghettini with prawns and chorizo pangrattato

Whip up a quick and delicious prawn and chorizo spaghetti for dinner in no time with basic ingredients.
Ingredients:
  • 150g crusty bread, chopped
  • 125g chorizo, coarsely chopped
  • 125ml (1/2 cup) extra virgin olive oil
  • 300g dry spaghettini pasta
  • 3 garlic cloves, finely chopped
  • Pinch dried chilli flakes
  • 300g peeled green prawns, chopped
  • 250.00 ml fresh basil leaves, large leaves torn
Instructions:
  • In a food processor, pulse the bread until coarse breadcrumbs form and then transfer to a plate. Next, pulse the chorizo in the food processor until finely chopped.
  • In a large frying pan over medium-low heat, warm 1 tablespoon of oil. Cook the chorizo, stirring frequently, for 5 minutes until golden. Then add the breadcrumbs and continue stirring for 2 minutes until they turn golden. Remove the mixture to a plate lined with paper towel to drain excess oil, and wipe the pan clean.
  • Cook the pasta in a large saucepan of boiling salted water until perfectly cooked. Drain and set aside.
  • Warm the rest of the oil in the pan over low heat. Introduce the garlic and chilli flakes, cook for 2 minutes until fragrant. Turn up the heat to high and add the prawn meat, stirring for 2 minutes until it changes color. Mix in the cooked pasta, half of the breadcrumb mixture, and torn basil leaves. Toss everything together. Season to taste and serve, garnished with the remaining breadcrumb mixture and small basil leaves.
