Prawn & leek spaghetti

Effortless summer meal with only 5 ingredients for more time to relax and savor the evening.
Ingredients:
  • 500g pkt spaghetti
  • 45.50 gm olive oil
  • 2 leeks, trimmed, coarsely chopped
  • 1kg large green banana prawns, peeled leaving tails intact, deveined
  • 1 lemon, rind finely grated, juiced
  • 250.00 ml fresh continental parsley leaves
Instructions:
  • Boil pasta until perfectly al dente. Drain and return to the pan.
  • Heat 2 tablespoons of oil in a large non-stick frying pan over medium heat. Sauté leek for 6 minutes, stirring occasionally until tender. Transfer to a bowl.
  • In a hot pan with remaining oil, sizzle the prawns seasoned with salt and pepper until they turn color, about 1-2 minutes per side. Transfer to a plate and repeat with the rest of the prawns.
  • Combine the leek, prawns, lemon rind, lemon juice, and parsley with the pasta. Season generously with salt and pepper, then toss everything together.
