Prawn & papaya lettuce wraps

Make zesty prawn and papaya salad lettuce wraps.
Ingredients:
  • 1 small red chilli, seeded, finely chopped
  • 22.00 gm sweet chilli sauce
  • 12.20 gm fish sauce
  • 18.40 gm vegetable oil
  • Juice of 1 lime
  • 2 tsp palm sugar*
  • 400g cooked peeled prawns, cut into bite-sized pieces
  • 1 small red papaya, peeled, seeds removed, cut into bite-sized pieces
  • 20.00 ml chopped coriander leaves
  • 4 spring onions, sliced on the diagonal
  • 4 butter lettuce leaves
Instructions:
  • Combine chilli, sweet chilli sauce, fish sauce, oil, lime juice, and sugar in a bowl, gently whisk to blend. Add prawns, papaya, coriander, and most of the spring onion (save some for garnish).
  • Lay a crisp lettuce leaf on each plate, fill with the delicious mixture, and top it off with the reserved spring onion for an extra touch of flavor.
