Ingredients:
  • 1 radicchio, leaves separated, washed, dried
  • 24.40 gm oyster sauce
  • 10.60 gm soy sauce
  • Pinch of caster sugar
  • 36.40 gm peanut oil
  • 700g medium green prawns, peeled, deveined, roughly chopped
  • 125g bean sprouts, trimmed
  • 75g (1/2 cup) roughly chopped water chestnuts
  • 5 green shallots, ends trimmed, chopped
Instructions:
  • Arrange the radicchio leaves cup-side up on a large serving platter. Mix the oyster sauce and soy sauce in a small bowl, then adjust the seasoning with sugar to taste.
  • In a large wok over high heat, heat the oil until it starts to smoke. Quickly add the prawns and stir-fry for 1 minute. Toss in the bean sprouts, water chestnuts, green shallots, and garlic, and stir-fry for another 1-2 minutes until the prawns change color.
  • Create a hole in the middle of the prawn mix and pour in the oyster sauce mix. Stir-fry until fully mixed. Place the prawn mix in a big bowl. Stuff each radicchio leaf with prawn mix and serve right away.
