Vietnamese-inspired prawn banh mi sandwich: baguette filled with cilantro sauce, pickled veggies, and prawns.
Ingredients:
  • 1 large carrot, peeled and shredded
  • 1 stalk celery, chopped
  • 2 scallions (green onions), chopped
  • 0.25 cup rice vinegar
  • 0.33333334326744 cup chopped fresh cilantro
  • 3 tablespoons low-fat mayonnaise
  • 3 tablespoons low-fat plain yogurt
  • 1 tablespoon lime juice
  • 0.125 teaspoon cayenne pepper
  • 3 (12 inch) French baguettes, cut into halves
  • 1 pound frozen cooked prawns, thawed and tails removed
  • 18 thin slices cucumber, or more to taste
Instructions:
  • Mix together the carrot, celery, and scallions in a bowl. Drizzle vinegar over the vegetables and toss well to coat them. Let the mixture marinate for a bit.
  • Combine fresh cilantro, creamy mayonnaise, tangy yogurt, freshly squeezed lime juice, and a hint of spicy cayenne pepper in a bowl. Then, generously spread approximately 2 teaspoons of the zesty cilantro sauce onto the bottom piece of each baguette. Enjoy the burst of flavors!
  • Using a slotted spoon, lift vegetables from the vinegar and place them on top of the cilantro sauce layer on the baguette pieces. Discard the remaining vinegar.
  • Toss prawns in the rest of the cilantro sauce and layer 10 prawns over vegetables; add cucumber slices on top. Finish by placing the top baguette piece to form a sandwich.
