Elevate classic prawn cocktail with a modern twist: gin-infused lime jelly.
Ingredients:
  • 131.25 gm lime juice, strained
  • 9.00 gm powdered gelatine
  • 125.00 ml gin
  • 61.88 gm whole-egg mayonnaise
  • Extra 21.00 gm lime juice
  • 20.00 ml finely chopped fresh chives, plus extra to serve
  • 1 Lebanese cucumber, seeded, chopped
  • 1 avocado, cut into thin wedges
  • 18 cooked large king prawns, peeled, deveined (tails intact)
Instructions:
  • In a small saucepan, heat lime juice and 1 cup of water until boiling. Remove from heat, then sprinkle gelatine over the hot lime mixture and whisk until dissolved. Strain through a fine sieve into a jug and stir in gin. Let the mixture cool for 5 minutes. Divide the mixture between 6 wide-based champagne glasses of 2/3-cup capacity. Cover and refrigerate for 2 hours or until set.
  • Combine creamy mayonnaise, zesty lime juice, and fresh chives in a bowl. Mix thoroughly and season to perfection.
  • Arrange succulent prawns, creamy avocado, and refreshing cucumber on top of zesty lime jelly. Add dollops of tangy lime mayonnaise and sprinkle with fresh chives for a burst of flavor. Enjoy this elegant dish.
