Prawn fajitas

Make zesty prawn tacos with salsa, avocado, and sour cream.
Ingredients:
  • 125g (1/2 cup) sour cream
  • 21.00 gm fresh lime juice
  • 30.00 ml coarsely chopped fresh coriander
  • 18.20 gm olive oil
  • 1 small red onion, halved, thinly sliced
  • 1/2 red capsicum, deseeded, thinly sliced
  • 1/2 green capsicum, deseeded, thinly sliced
  • 200g medium green king prawns, peeled
  • 1 large vine-ripened tomato, finely chopped
  • 1/2 tsp ground coriander
  • 1.25 gm mild paprika
  • 1 large avocado, halved, stone removed, peeled, chopped
Instructions:
  • Preheat the oven to 180C. Warm the tortillas wrapped in foil for 10 minutes in the oven. Take out and mix sour cream, lime juice, and fresh coriander in a small bowl.
  • While the pan heats up with half of the oil, sauté the onion, red capsicum, and green capsicum for 2-3 minutes until the onion softens. Transfer the mixture to a bowl. Increase the heat and add the remaining oil to the pan. Stir-fry the prawns for 1-2 minutes until they curl and change color.
  • Combine the savory onion mixture, juicy tomato, fragrant cumin, ground coriander, and spicy paprika with the succulent prawns. Cook and stir for 1-2 minutes until a mouthwatering aroma fills the kitchen. Take it off the heat when ready.
  • Spoon prawn mixture onto tortillas, then top with avocado and a dollop of sour cream mixture. Fold or roll up tortillas and serve right away.
