Prawn fajitas

Ingredients:
  • 4 flour tortillas
  • 2 tsp Cajun spice*
  • 8 medium green prawns, peeled, de-veined, tails intact
  • 1 small avocado, peeled, cut into dice
  • 4 vine-ripened tomatoes, peeled, seeds removed, diced
  • Juice of 1 lime
  • 40.00 ml chopped coriander, plus extra whole leaves to garnish
  • Lime wedges, to serve
  • Sour cream, to serve
Instructions:
  • Fire up the barbecue or grill.
  • Wrap tortillas in foil and place on the barbecue to warm indirectly. Coat prawns in Cajun spice and flour mixture. Combine avocado, tomatoes, lime juice, and coriander; season with salt and pepper. Heat oil in a pan or on a grill plate, cook prawns for 1-2 minutes per side until cooked. Assemble tortillas, prawns, salsa, lime wedges, and extra coriander on plates. Serve with sour cream on the side.
