Prawn noodle soup

Fall-inspired, flavorful dinner idea with fresh ingredients.
Ingredients:
  • 500ml chicken stock
  • 2 garlic cloves, thinly sliced
  • 2 tsp grated ginger
  • 22.00 gm sweet chilli sauce
  • 21.00 gm dark soy sauce
  • 24.40 gm oyster sauce
  • 1/2 tsp sesame oil
  • 200g soba noodles
  • 2 baby bok choy, quartered
  • 12 green prawns, peeled (tails intact), deveined
  • 1 long red chilli, sliced on an angle
  • 1/2 bunch coriander, leaves chopped
  • 3 spring onions, thinly sliced on an angle
  • 1 lime, quartered
Instructions:
  • In a saucepan over high heat, combine the stock, garlic, ginger, sweet chili sauce, soy sauce, oyster sauce, sesame oil, and 1 cup (250ml) water. Bring to a boil, then simmer over medium heat. Adjust seasoning with more sweet chili sauce, soy sauce, or sesame oil to taste.
  • Cook noodles for 2 minutes until al dente, then introduce bok choy and prawns. Continue cooking for 3-4 minutes until bok choy leaves are wilted, prawns are just cooked, and noodles are tender.
  • Split the mixture into 2 bowls, top with chili, coriander, and spring onion, and serve with a side of lime for squeezing.
